Report on Training of Tea Deep Processing Technology in 2017

On June 22-24, 2017, "Technical Public Service Platform for Tea Deep Processing Industry in Fujian Province" was jointly organized by Zhangzhou Science and Technology Development Service Center, Damin Food (Zhangzhou) Co., Ltd. and Zhangzhou Vocational College of Science and Technology. The training was organized and coordinated by Professor Wu Shibin, Professor Yue Pengxiang and Professor Cai Liwei, who were in charge of the platform. A total of 38 business leaders or technicians from more than 20 tea enterprises were invited. The main forms of the training were the reports, visits and face-to-face exchanges of industry experts, aiming at establishing communication channels for the whole tea industry chain and strengthening them. The exchange and cooperation between industrial tea production enterprises and tea intensive processing enterprises can realize the sustainable development of tea intensive processing.

On the afternoon of the 22nd, the platform technicians led the representatives of 22 tea enterprises, including Fujian Sufu Tea Industry Co., Ltd. and Zhejiang Mingda Tea Industry Co., Ltd., to visit the liquid tea beverage production line of Zhangzhou Dingjin Food Co., Ltd. of Damin International Group and the solid tea beverage production line of the second factory of Damin Food (Zhangzhou) Co., Ltd. Industrial tea producers have a more intuitive understanding of the actual operation and technical specifications of tea intensive processing. On the morning of 23rd, the platform technicians first led the participants to visit the R&D center and instant tea production line of Damin Food (Zhangzhou) Co., Ltd. and then came to the training room of Damin Food (Zhangzhou) Co., Ltd. The platform technicians made a report on the quality control of industrial tea, including "Industrial Tea". The physical and chemical detection methods, the microbial detection methods of industrial tea, the interpretation of the new national standard for agricultural residues, the matters needing attention in controlling agricultural residues in tea producing areas, and the requirements of food safety law on tea production aroused great interest of the participants. Everyone expressed their opinions on the training meeting site, and the atmosphere was very active.

The afternoon training continued on the 23rd. Professor Sun Yun, deputy director of the Department of Tea Science of Horticulture College of Fujian Agricultural and Forestry University and scientist of the National Tea Industry Technology System, gave a report on tea processing technology and quality. Professor Sun introduced in detail the processing technology and quality characteristics of six major tea products, and pointed out the current tea processing research. After that, Professor Cai Liewei, who is in charge of the platform, gave a report on the quality and safety of tea for tea food. He pointed out that Chinese people experienced the absence of tea quality and safety from tea eating to tea drinking to tea tasting and then to tea eating. Several times control and promotion, tea for tea meal and tea food will be strictly controlled from the tea garden base, Tea Germplasm resources, tea processing, tea storage and other aspects in the future; then, Professor Yue Pengxiang, who is in charge of the platform, made the report "Innovative Direction of Solid Beverage and Application of Instant Tea", pointing out that in a healthy environment. The market of solid beverage is developing towards natural, healthy, functional and high-end direction. The application market of instant tea powder, a product of tea intensive processing, will change accordingly. The new market situation requires tea processing enterprises and tea intensive processing enterprises to grasp the development trend of the industry, dare to innovate and work together for China. The development of Chinese tea industry has contributed a lot.

After the three reports, the delegates also had further communication with the platform technicians on the training content.
